With passion, we share the art of fresh pasta and the pleasure of good wine, creating an environment that fosters learning and an authentic connection between us and our guests.
Course Program
- 6.00 pm Meeting at the «Porta Napoli» meeting point
- 6.15pm Experience begins with welcome drink.
- During the course and dinner there will be a tasting of local wines
- Information on the products used (Each of the participants will produce their own quantity of dough necessary to shape two types of fresh pasta)
- Start of production of «Orecchiette», the first type of pasta.
- Aperitif consisting of some typically and strictly local dishes and start of the tasting of a selection of wines produced from Salento grapes and cellars (white, rosé and red).
- Fresh tomato sauce with basil and ricotta cheese for the orecchiette;
- Dressing based on chickpeas and vegetables for macaroni.
- Creation of the second type of fresh pasta, maccheroncini al ferretto, pasta shapes made with a typical tool called "Caturu".
